This easy weeknight chili is perfect for lazy Sunday afternoons with the family or for feeding a large crowd coming over to watch football.
It’s that time of year when the air is getting crisper and we all start craving warm comfort foods. Hello, chicken casseroles and macaroni & cheese.
Chili is my favorite comfort food. It’s warm, filling and this one has just a touch of spice. As much as I love chili, I don’t want to spend a lot of time making it. It has to either be a crockpot recipe or a simple stovetop version that can be made on busy weeknights.
This is my stovetop version. It can be made in less than 30 minutes or you can let it simmer for an hour. The choice is up to you. I like to let mine simmer for a while unless I’m super busy after work.
As I mentioned earlier, this chili has a bit of spice to it. Not too much just the perfect amount. We love a bit of spice in a lot of our foods, but not everybody does. The beauty of chili is that you can change it to suit your family. If you have kids or family members that don’t like spice then decrease the amount of chili powder and the cumin. Also, you can leave out the green chilies to help make it less spicy. I love a chili that has both kidney beans and pinto beans so I put them both in this dish. The green pepper gives a nice pop of color and adds a crisp texture to the chili.

Ingredients
- 1 lb. ground beef
- ½ cup chopped onion
- 1 15 oz. can tomato sauce
- 1 15 oz. can kidney beans, not drained
- 1 15 oz. can pinto beans, not drained
- 1 15 oz. can diced tomatoes, drained
- 1 4oz. can diced green chilies, not drained
- ½ green pepper diced
- 1 tsp. ground cumin
- 1 ½ tbsp.chili powder
- 1 tsp. black pepper
- 1 tsp. salt
Instructions
- In a large pot, brown the ground beef and onion. Drain if necessary.
- To the pot add all the other ingredients. Bring to a soft boil and then simmer for 30 minutes to an hour.
- Serve.
