Big on flavor and short on time, I love whipping up a colorful side of Simply Delicious Blistered Tomatoes for us to enjoy with a hot grilled steak or seasoned chicken breast. No matter what I serve this dish with, I always get rave reviews, even from the kids! This sweet yet savory blistered tomato dish is so quick to make, which I adore on busy weekday nights when I want something fresh and fast, and it goes with everything!

Veggies: To make this dish, you will need fresh sweet tomatoes, sliced red onion, sliced shallot, and freshly chopped basil.

How to Make Simply Delicious Blistered Tomatoes

STEP ONE: Heat a large skillet over medium heat. Combine the sliced onion, shallot, and half of the olive oil in a bowl and toss to mix.

STEP TWO: Add the coated onions and shallots to the hot skillet and cook for about 3 minutes, letting the onion and shallots soften.

STEP THREE: Using the same mixing bowl, add the tomatoes and remaining olive oil and toss to coat. Add the tomatoes to the skillet and season the veggies with salt and pepper. Allow the tomatoes to cook for a couple of minutes, stir the veggies, and continue cooking until the tomatoes blister.

STEP FOUR: Before removing the pan from the heat, sprinkle basil over the tomatoes and stir.

STEP FIVE: Remove the pan from the stovetop and add feta cheese. Stir to combine and serve immediately.

Tips for Success

  • Grape and cherry tomatoes work in this easy recipe, so pick your favorite!
  • Wait until just before you take the pan off the heat to add the basil. You want to wilt the basil to release the wonderful smell and flavor, but you don’t want to fry it.
  • Use a skillet large enough to allow for a bit of space between the tomatoes; that way, they can blister rather than steam.
  • Any leftovers should be stored in a sealed container in the fridge for 3-4 days and reheated in the microwave for 30 seconds until hot.

Ingredients
  

  • red onion peeled and thinly sliced
  • ½ shallot peeled and thinly sliced
  • 4 tablespoons olive oil divided
  • 2 pints cherry tomatoes (or grape tomatoes)
  • ¼ teaspoon salt
  • teaspoon black pepper
  • ½ cup fresh basil leaves chopped
  • ½ cup feta cheese crumbled

Instructions
 

  • Place a large skillet over medium to medium-high heat. In a bowl, toss together the red onion, shallot, and 2 tablespoons of olive oil until coated.
  • Dump the onion and oil into the hot skillet and saute until they just begin to soften and turn translucent, around 3 minutes.
  • In the same bowl, toss the tomatoes and 2 tablespoons of olive oil. Then add both to the skillet with the onions. Sprinkle with salt and pepper and allow to cook, stirring occasionally, until the tomato skins blister and soften, around 5 minutes.
  • Add the fresh basil, stir gently, and then remove from heat. Adjust the seasoning with more salt and pepper as needed. Sprinkle with feta cheese. Serve warm with your favorite meals.
