Sausage Kielbasa or smoked sausage makes this crock pot casserole wonderfully meaty! Use whichever you like best!

Potatoes: Diced frozen hash browns make this recipe fast and easy. Of course, you can always dice your own potatoes!

Creamy: You will need a can of mushroom soup and sour cream to blend all the ingredients and make it luscious.

Oniony: A small yellow or white onion plus a packet of French onion soup mix adds a little tangy sweetness, elevating the flavors in this casserole to something really special!

Garnish: A sprinkle of fresh chopped parsley adds a beautiful green color for a nice presentation and a subtle flavor enhancement. Yum!

How to Make Crock Pot Sausage & Hashbrown Casserole

STEP ONE: Add the canned soup, sour cream, and soup packet mix to a medium bowl and blend well. Set aside.

STEP TWO: Lightly grease the crock pot. Add the diced hashbrowns, sliced sausage, chopped onion, and 2 cups of shredded cheddar cheese. Mix with a large spoon.

STEP THREE: Pour the soup mixture over the top and stir together.

STEP FOUR: Cook on LOW for 4.5 hours. Sprinkle the remaining 1 cup of cheese over the casserole.

STEP FIVE: Cover and cook until the cheese is melted, about 15 minutes more. Serve warm with a sprinkle of parsley for garnish and enjoy!

  • In a pinch, you can substitute frozen tater tots or shredded hashbrowns for the diced hashbrowns.

  • Don’t assume this recipe is gluten-free. Many canned soups and packaged mixes contain gluten, so check the labels to be sure!
  • If you substitute breakfast pork sausage for the kielbasa, cook it until browned in a skillet first and drain off the grease.

Smoked sausage and kielbasa are names often used interchangeably in the U.S., but they aren’t the same. While they are both encased sausages, smoked sausage refers to a variety of finely ground meats like pork, beef, or chicken that generally have a mild, smoky flavor. Kielbasa is a pork or pork & beef sausage highly seasoned with cloves, marjoram, and garlic, giving it a very strong, distinctive flavor.

Can You Freeze Sausage & Potato Casserole?

Since this is a crock pot casserole, there is no need to make and freeze this recipe in advance. However, the leftovers can easily be frozen! Simply place the leftover casserole in an airtight container and freeze it for up to 3 months. When ready to use, thaw completely. Place thawed hash brown casserole in an oven-safe dish, cover with foil, and reheat at 350 degrees F for 30 minutes or until warm all the way through.

Ingredients
  

  • 10.5 ounces cream of mushroom soup (1 can)
  • 1 cup sour cream
  • 1 ounce french onion soup mix (1 packet)
  • 32 ounces frozen cubed hashbrowns
  • 14 ounces kielbasa or smoked sausage thinly sliced
  • 1 medium yellow onion peeled and diced
  • 3 cups cheddar cheese shredded, divided
  • Fresh parsley chopped, for garnish

Instructions
 

  • To a medium mixing bowl, add the can of soup, sour cream, and French onion soup mix. Stir until well combined. Set aside.
  • Lightly coat the crock pot with non-stick cooking spray. Add the hashbrowns, kielbasa, onion, and 2 cups of cheddar cheese to the crock and mix.
  • Pour the soup mixture over top of the potatoes and sausage and stir until well mixed.
  • Cover and cook on LOW for 4.5 hours (or until the potatoes are tender and cooked through). Uncover and top with the remaining 1 cup of cheese. Cover and cook until the cheese is melted, about 10-15 minutes.
  • Serve warm, sprinkled with chopped parsley for garnish, if desired.

    Followed recipe exactly, and I did not care for it at all. Brought it to a potluck and only one person went back for seconds. Will not make again but I have liked some of your other recipes.

    I have not tried this recipe but sounds amazing! What are your thoughts on the slow cooker on low for up to 8 hrs? I was thinking of this for a hearty breakfast for early morning hunting. Should I change anything?
