Today we’re so excited to introduce you to our friend Rachel from {I love} My Disorganized Life. She is so fantastic I know you’ll just love her and her blog!
Don’t you just love fall? The kids are back in school, the weather is cooler, and it’s time to kick baking into high gear. I’ve recently learned how to make scones, and I love that these have apple pie filling in them. The basic recipe is the same one I used for making pumpkin scones last week, I just changed it up a bit.
They are super easy to make and can be on the table in about 30 min, so you can whip them up at a moments notice, which is perfect for me when I’m trying to get kids out the door and off to school.
When I quit my day job three years ago, {don’t be fooled, I work harder staying home than I did as a retail manager!} I started making the kids’ lunches every morning. If I get up early enough, I’ll even make them breakfast. Sometimes it’s eggs and toast, but this morning it was scones. And since the recipe makes 16 of them, I enjoyed one {or two} with my coffee.
Ingredients
- 2 C flour
- ⅓ C granulated sugar
- 1 Tbsp baking powder
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ C cold butter cubed
- ⅔ C apple pie filling smashed
- ¾ C heavy cream
Instructions
- In a large bowl, whisk together flour, sugar, baking power, cinnamon and nutmeg
- Work in butter using a pastry blender
- In a med bowl, whisk apple pie filling and cream: stir into flour mixture
- On a lightly floured surface, shape into an 8-inch square {it will be sticky}
- Cut into 16 triangles and bake on a baking sheet at 400* for 20 min.
- Brush with melted butter and sprinkle with sugar, if desired
*These apple pie filling scones are moister than normal scones, which is an added bonus!
I think I’d like to make blueberry scones next. What’s your favorite kind of scone?

I have made several scone recipes but this is the first Apple Pie Scone recipe I have made. The recipe is a bit hard to bring together at the end but the taste is fantastic. I used pumpkin pie spice and added cinnamon chips to the recipe. I will make again and try adding a tad more liquid to make the scones easier to form.

My favorite scones are blueberry and I have been looking for a good and easy recipe to make them since the bakery that I used to buy them at has closed. Could you please print a recipe for these? this one looks so good and so easy that I am saving it and making these asap. Thanks 🙂

Ronni, I just found this recipe yesterday and made them. I love blueberry scones too, and this one is by far my favorite. I had one both with and without the lemon glaze. I prefer them without. Also, as I don’t have a food processor I folded my blueberries into the dry ingredients before adding the wet and it worked out just fine. Let me know how you like them! http://www.blueeyedbakers.com/home/2011/9/1/blueberry-scones-with-lemon-glaze.html

I love scones! Challenge Butter has a recipe for Scottish Scones, made with oatmeal. Fabulous for breakfast. And if you like savory then try Bangin’ Bacon Cheddar Scones from Foodnetwork. I’m not a fan of apple pie filling but I will definitely try these. Thanks, ladies!
