Apples: For this recipe, I used Granny Smith apples to balance the tart and sweet, but any apple you love works well in this bread. Be sure to peel, core, and dice the apples before using them in the recipe.

Dry Ingredients: You will need cake flour, granulated sugar, ground cinnamon, baking powder, brown sugar, and salt to make this bread.

Wet Ingredients: Set out whole milk and eggs to come to room temperature. You’ll also need to melt unsalted butter and grab the vanilla extract.

How to Make Apple Cinnamon Bread

STEP ONE: Preheat the oven to 350 degrees F and line a 9×5 loaf pan with parchment paper. Combine the diced apples and a little of the cake flour and mix well. In a separate bowl, whisk together some of the cinnamon and sugar.

STEP TWO: In a large bowl, stir the melted butter and both the brown and granulated sugar together. Add the milk, vanilla, and eggs, and mix well.

STEP THREE: In a separate medium bowl, whisk together the cake flour, baking powder, cinnamon, and salt. Slowly add the dry ingredients to the bowl and mix until just combined. Gently fold the apples into the batter

STEP FOUR: Pour half of the batter into the prepared loaf pan. Sprinkle 3 tablespoons of the cinnamon-sugar mixture over the batter, then add the remaining half of the batter. Top the batter with the remaining cinnamon and sugar mixture and bake for 40 minutes, or until a tester comes out clean.

STEP FIVE: Remove the apple bread from the oven and let it cool in the pan on a wire rack for 10 minutes before turning it out.

  • In a medium mixing bowl, stir together the cake flour, baking powder, cinnamon, and salt. Set aside.
  • In a large mixing bowl, stir the melted butter, sugar, and brown sugar together with a rubber spatula. Mix in the egg, milk, and vanilla until combined.
  • Add the flour mixture to the wet ingredients and mix until just combined. Add the apples and fold them into the batter. Don't overmix.
  • Pour half of the batter into the prepared loaf pan and spread into an even layer. Sprinkle 3 tablespoons of the cinnamon-sugar over the batter to create an even, thick layer. Pour the remaining batter into the loaf pan, spread it out, and top with the remaining cinnamon-sugar.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean or with a couple of moist crumbs.
  • Remove from the oven and place on a wire rack to cool for at least 10 minutes before removing from the pan and slicing. Serve warm or at room temperature.

Notes

I like Granny Smith apples in this recipe, but you could use any kind of apple you like.
