Double Tomato Bruschetta is a wonderful appetizer full of incredible flavors, especially for the holidays, with its festive colors! It was an awesome weekend, which ended with a holiday party with friends and this delicious bruschetta! Friday night was an amazing girl’s night out to celebrate a friend’s and my birthday and to just hang out with the girls. What a fun night!!! Saturday was another girl’s day, but this time with my daughter. We started our morning with pedicures, breakfast, and coffee and cider! Then we headed to the baseball field to watch my son’s practice for a couple hours. After practice, we did some shopping, went out for sushi, and watched movies! My husband and son went to the Stanford/ASU football game (my son has big dreams to go to Stanford one day!!!), so I loved having a day with my girl! Sunday we wrapped up the weekend at a fun holiday party with a big group of great friends! There was a ton of yummy food and we had a beautiful afternoon celebrating with our friends!

Ingredients
- 6 roma plum tomatoes, seeded and chopped
- ½ cup sun-dried tomatoes packed in oil, chopped
- 3 cloves minced garlic
- ⅛ cup olive oil
- 2 tablespoons balsamic vinegar
- ¼ cup fresh basil stems removed, chopped
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 12 oz fresh mozzarella cheese chopped
- 1 French baguette sliced
- optional-garlic butter
Instructions
- Preheat the oven on broiler setting
- In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, pepper, and mozzarella cheese
- Allow the mixture to sit for at least 10 minutes (I let mine sit for hours)
- Cut the baguette into 3/4-inch slices
- On a baking sheet, arrange the baguette slices in a single layer
- Optional-Spread garlic butter on each slice of bread and broil for 1 to 3 minutes, until slightly brown
- Divide the tomato mixture evenly over the baguette slices or place bread slices around the bowl of bruschetta and people can put their own topping on the bread
