This Raspberry Champagne Cocktail punch is perfect for your holiday celebrations! This cocktail is simple, gorgeous and will impress your friends and family!
With the new year slowly approaching, I thought it would be perfect to share one of my favorite cocktails with you. It’s ideal for a New Year’s Eve party because it’s fun, bubbly, and beautiful. This Raspberry Champagne Cocktail is so easy to whip up and takes no time! However, I do not recommend making it ahead because of the bubbliness from the champagne and ginger ale. It’s the perfect “high end” counterpart to my favorite Raspberry Peach Wine Slushie!

Do you have any New Year’s Eve plans yet? If not, no worries, because I am a last-minute planner, as well. I will have to say this Raspberry Champagne Cocktail is the perfect last-minute drink. All it takes is 5 minutes from start to finish. I told you it was easy! All you will have to remember is to allow your frozen raspberries to thaw for at least 10-15 minutes and that’s it. It’s not even necessary to allow them to thaw first, but it does allow for the raspberries to turn the cocktail into a gorgeous dark red color. I didn’t notice this before, but it’s even perfect for a holiday party with the fresh mint as a garnish!
Looking for appetizers? My Shrimp Scampi Crostini would make for a delicious appetizer to serve with this cocktail or even my Bacon Honey Bourbon Chicken Meatballs (so good)!
The reason why I used frozen raspberries is to color the cocktail and because it’s so hard to find fresh raspberries in the winter here (they are out of season). With the frozen raspberries being a little softer they soak up the liquid and are even better to enjoy when you are finished drinking it. A win-win in my book!
Ingredients
- 10 ounces frozen raspberries slightly thawed
- ½ cup light rum
- 750 ml bottle of brut champagne
- 1 liter ginger ale
- mint to garnish (optional)
Instructions
- Place the slightly thawed raspberries in the bottom of a pitcher.
- Add the light rum champagne, and ginger to the pitcher and stir to combine.
- Place crushed ice into a cocktail glass, pour the cocktail and garnish each glass with fresh mint.
