Let’s talk turkey, wait, I mean favorite food season today! Not only is fall my favorite season of the year (changing leaves, fresh air, etc.) but it’s also my favorite food season. There is something about fall dishes that is so comforting this time of year and that is where sweet potatoes come in. They make a great accompaniment to your holiday meals as either mashed, candied, sweet or savory and can be enjoyed in recipes from breakfast to dessert too. So today we are sharing a way to make sweet potatoes as an easy appetizer. These rounds are the perfect bite-sized snack and are a bit on the healthier side so you don’t need to feel guilty having a few.

As we were making (and sampling these), I was thinking of some ways you could change them up a bit. If you aren’t a fan of goat cheese, try replacing with regular cream cheese. Walnuts could replace the pecans and dried dates could be used for the dried cranberries. For those that might want a bit of tanginess, try using a balsamic glaze drizzle. The rounds are your starters and just use your imagination to create your own version. For sure you will love the roasted sweet potatoes since they are the star of the show!

Once you have topped your rounds with the creamy goat cheese mixture, candied pecans, and sweet cranberries, be sure to give them a drizzle of honey. That provides a nice bit of sweetness.

Sweet Potato Rounds with Goat Cheese

Ingredients
  

  • 3-4 medium sweet potatoes peeled and cut into 1/2" slices about 24
  • olive oil
  • sea salt
  • 1 tablespoon granulated sugar
  • ½ teaspoon cinnamon
  • 4 oz goat cheese
  • 1 tablespoon cream or half and half
  • 1 tablespoon honey
  • ¼ cup chopped candied pecans
  • ¼ cup chopped dried cranberries
  • honey for drizzling

Instructions
 

  • Preheat oven to 400 degrees
  • Combine the sugar and cinnamon and set aside
  • Brush each side of the rounds with olive oil and also sprinkle a bit of salt and the sugar cinnamon on each side
  • Place one side down on a heavy cookie sheet
  • Bake for 15 minute; turn and then bake for another 15 minutes
  • While baking combine the goat cheese with the cream (or half and half) and honey with a mixer
  • When rounds are done, let cool a bit then add about a teaspoon of goat cheese mixture on each round, sprinkle with pecans and craisins
  • Drizzle with a bit of honey and serve immediatey

    Used Honey Chevre in place of the goat+cream+honey and cranberries (rather than craisins-cranberries are listed in the Recipe, craisins listed in the Instructions).

    Absolutely delightful with a nice flavor profile: tangy and sweet from the honey goat cheese to a bit of tartness from the cranberries and to the crunch from the homemade candied pecans all topped off with a hint of cinnamon and delivered on a sweet potato vessel. Can’t wait to share with family over the holidays.

    I made these last night as a side dish for our broiled fish dinner and they were incredibly delicious!!! Easy to make, too. I will DEFINITELY be making these on a regular basis from now on! Love them!!!!
