There is something about mashed potatoes that just feels like home to me. Growing up on a farm, our dinners, or should I say suppers, consisted primarily of meat and potatoes. Whether it was meatloaf, hotdish, or pork roasts, they all paired well with mashed potatoes! My mom made a classic recipe with butter, cream, salt, and pepper. Personally, I like something with a little more flavor and creaminess, so I much prefer these Cream Cheese Garlic Mashed Potatoes.
My husband on the other hand will take a mashed potato any way he can get them. He will even eat the reconstituted powdered mashed potatoes. NO THANK YOU! We had to use those when we catered weddings at a cafe I ran, and I would always wonder why people would choose mashed potatoes when that is the quality that they were getting?! We tried to doctor them up the best we could, with plenty of butter, but at the end of the day, it just isn’t the same as creamy homemade mashed potatoes.

Ingredients
- 4 medium yellow potatoes
- 4 oz. cream cheese cubed
- ½ tsp. salt
- 1 tsp garlic powder
Instructions
- Rinse and peel your potatoes. Add the potatoes to a pot of salted boiling water. Cook until they are fork tender for about 15 minutes.
- Removed the potatoes from the water and place in a large bowl. Add the remaining ingredients and mash the potatoes using a large fork or potato masher until smooth and well combined.
- *Do NOT use an electric beater or you can easily over beat the potatoes and they will become gummy.
