I love celebrating the Fourth of July! We always had such a great time when I was growing up! We’d usually go to the beach in Florida and see family, have an easy dinner then set off fireworks on the beach. It was a blast and the perfect vacation every summer. Last year we spent our first Fourth of July at the beach since moving to Oregon. It was so amazing to share a part of my childhood with my little monkeys. We just hung out all day on the sand and then around dinnertime we had a fire on the beach and roasted hot dogs and then had s’mores for dessert. It was the best way to wait for sunset and fireworks!
Let me tell you, the absolute best way to have a Hebrew National hot dog is cooked over a fire! I love having a picnic on the Fourth. I totally recommend making a couple of dishes that you can make ahead of time and travel easily! My favorite is a good macaroni salad. I saw this Pineapple Salsa over on I Heart Naptime and had to try it. I decided to make a Hawaiian Macaroni Salad to go along with it and it was fantastic! We ended up having it two days in a row and it was amazing!
Entertaining for the Fourth should be as easy as possible because you want to be spending time with your friends and family making memories and not stuck cooking for everyone! I love these because you could pack it all up so super simply and have a great time at the beach! Even if you can’t make it to the beach, you could pack this meal up and take it to the park with the big fireworks display. If you’re having a barbecue in your backyard it’s great because you can make it the day before and party prep is easy peazy!
I’m a huge proponent of easy food for parties! Hebrew National hot dogs are our favorite to serve up to friends. They taste amazing and everyone loves them. Ingredients
- 1 lb. macaroni pasta
- 3 tbsp apple cider vinegar
- 1 cup shredded carrots
- 1 cup purple onion chopped
- 1 red bell pepper seeded and chopped
- 2 cups mayonnaise
- 20 oz. can sliced pineapple in juice, chopped
- ½ cup pineapple juice from above can
- 1 tsp salt
- 1 tsp pepper
- 1 cup ham steak chopped
- ¾ cup parsley chopped (optional)
Instructions
- cook macaroni according to package directions
- drain macaroni and pour back into the pot
- sprinkle with apple cider vinegar, then add carrots, onion, and pepper and toss
- allow to cool for 1 hour
- in a large serving bowl mix together the mayo, pineapple juice, salt and pepper
- pour in the macaroni, ham, pineapple, and parsley if using
- toss until well coated and refrigerate until ready to serve.
