I have officially found my new favorite way to eat asparagus. It might be the fact that it’s drenched in olive oil, or maybe the perfect pairing of garlic and parmesan, but whatever the reason – this Roasted Garlic Parmesan Asparagus is the bomb.com.
Last Sunday, my daughter was having kind of a rough time sleeping. She hadn’t been wanting to go to sleep at night and then she started crying during naptime, too. I went in to rock her for a minute, but any time I would try to put her back in her crib, she would just cry again! I love being able to hold her and comfort her and to know that she appreciates it, but in that moment, all I could think about was every single thing I still had to do that day. Good thing my husband, Zach, was home!
I called him in and asked if he could sit with her instead. Done. I went on my way to make this Roasted Garlic Parmesan Asparagus, while he kept the baby happy. I went in to check up on them 5 minutes later and she was out cold. #babywhisperer
I figured he was probably hungry, so I brought him in a plate of asparagus. Fifteen minutes later, I went to see how things were and he had downed the whole plate and was asking for more. If your husband asking for more food than you cooked yourself isn’t validation at its finest, I don’t know what is. After all was said and done, we cleaned the entire pound of asparagus and Addi slept for two hours. Basically, it was a rockin’ day. Ingredients
- 3 tablespoons olive oil
- 8 cloves garlic minced
- 1 lb. fresh asparagus ends trimmed
- salt and pepper to taste
- ⅓ c freshly grated Parmesan cheese
Instructions
- Preheat oven to 400ºF.
- In a small saucepan, heat oil over medium-low heat. Add garlic and cook until golden brown, stirring constantly. {About 3 minutes}
- Toss the olive oil and garlic with the asparagus, until evenly coated.
- Place the asparagus on a baking sheet and sprinkle with salt, pepper, and Parmesan.
- Bake for 12 minutes or until cooked to your liking.
- Serve while still warm.
