Popsicles are always a fun treat. Cool, refreshing, and flavorful. Mix up some fun flavors, add a little alcohol, and who can resist? These chocolate-covered cherry popsicles are made with delicious chocolate liqueur, making them perfect for adults. Plus, they can easily be made without the booze, so everyone can enjoy them.
Growing up, I can remember my mom loving to eat popsicles, and I think I’ve inherited it from her. She always preferred fruit over chocolate, so it’s no wonder she loved flavors like mango and strawberry. I love both chocolate and fruit, so, naturally, I couldn’t resist making a fruit-flavored popsicle dipped in chocolate.
I made a batch of these chocolate-covered cherry popsicles the other day, and it didn’t take long for the kids to gobble them up. Drizzled with a chocolate fudge topping, they reminded me of chocolate-covered cherries.
Ingredients
- 3 cups cherry juice
- ¼ cup chocolate liqueur {I used a clear one rather than the creamy kind}
- Quick hardening chocolate ice cream topping such as Magic Shell
- Popsicle mold
- Popsicle sticks
Instructions
- In a large measuring cup, combine the juice and liqueur
- Pour into popsicle molds {as directed for your particular molds}
- Place in the freeze until frozen, which can take several hours
- Remove from molds and either dip in a blow of the Magic Shell, or drizzle it onto the popsicles
- Serve and enjoy!
