APPLE CIDER CUPCAKES WITH APPLE CIDER CREAM CHEESE FROSTING are the ultimate in Fall desserts! The cupcakes full of the delicious spices of cider and small bites of fresh apple!
For me the Food Network is tied to apple cider. Strange yes, but also pretty awesome. When I was in eighth grade my grandmother came to visit us when we were living in Boston. I came down with the only case of strep throat I’ve ever had that week too. Both my parents were working so my grandmother was there to take care of me. She made me LOTS of warm apple cider to drink and she put on this new network that was all cooking shows. She and I both really enjoyed watching people cook on t.v. I wouldn’t start really cooking until I had my own kitchen and a family to cook for but I always loved to watch it. In the Fall when the weather starts to cool down I get excited about cooking again and so my love of food and apple cider intersect again!
These Apple Cider Cupcakes with Apple Cider Cream Cheese Frosting are like a bit of Fall amazingness! Yes, that’s a new word. Your welcome. 🙂 The inside of the cupcakes are filled with all the best cider spices and then little bites of fresh apple are mixed into every bite. My husband and I couldn’t wait for them to cool down so we were eating them sans frosting and I don’t regret a thing! I did save a few to add the smooth sweet and cheesy frosting to. My feeling is that the cupcakes could easily pass for a muffin and then they are topped with cream cheese so they are a totally acceptable breakfast, right? (No one burst my bubble.) You don’t need to wait for a reason to celebrate with these cupcakes, just celebrate Fall!
Ingredients
Apple Cider Cupcakes
- 2 ½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp ginger
- ½ tsp nutmeg
- ¼ tsp allspice
- ½ cup butter room temperature
- 2 cups granulated sugar
- 2 tsp vanilla extract
- 2 eggs room temperature
- ¾ cup buttermilk at room temperature
- 3 cups shredded apples (I used Figi and the big wholes on the grater)
Apple Cider Cream Cheese Frosting
- 8 oz. cream cheese room temperature
- ½ cup butter room temperature
- 1 tsp cinnamon
- ½ tsp nutmeg
- ⅛ tsp allspice half of a 1/4 tsp
- 4 cups of powdered sugar
- 2 tbsp of apple cider
Instructions
- preheat the oven to 350 degrees F and line a muffin pan with cupcake liners
- in a medium bowl whisk together flour, baking powder, salt, cinnamon, ginger and allspice then set aside
- in the bowl of a stand mixer beat the butter until it becomes light and fluffy
- add in the sugar and vanilla extract and continue to beat for another 2 minutes
- add in the eggs one at a time and mix until completely incorporated
- pour in the buttermilk and mix (batter will look lumpy but don't worry)
- turn off the mixer and dump in the flour mixture
- slowly turn the mixer back on and allow it to work until ingredients are just combined
- remove from stand mixer and fold in the shredded apple
- fill the cupcake liners 3/4 of the way full
- place in the oven to bake for 20-25 minutes or until a toothpick can be inserted into the center and removed clean
- remove from oven and allow to cool
Apple Cider Cream Cheese Frosting
- using a stand mixer or electric mixer beat the cream cheese until it's light and fluffy
- add in the butter and continue to beat until fluffy
- slowly add the powdered sugar, cinnamon, nutmeg, and allspice
- add in the apple cider
- Frost the cupcakes with the frosting and enjoy!!!

I think you could add walnuts. It does have an apple cake taste.
