This WATERMELON COLADA is delicious, refreshing, easy to make, and SUCH the perfect summer cocktail!
So if you have never made a cocktail with watermelon, I have some news for you. You guys need to freeze it. Did you know that??
Let me tell you what happened. The first time I made this, I went about my business throwing things in my blender, pouring in booze, like the happy little cocktail making blogger that I am. And when all was said it done, this beautiful pink lady was TASTY! But . . . . also super watery. Like there was no room to add some ice to her. It would have been nuts.
So! I poured the whole cocktail into a baking dish, threw it into the freezer . . . and then hours later took out a block of delicious ice. What do, friends?!?! What do??
This is the deal: If you are going to make a cocktail using watermelon, and really, you should, you need to cut it into cubes and then freeze it. It doesn’t add much time to your cocktail making process, really just like two minutes plus freezing time, and it is life changing. For real.
You guys. Your watermelon acts like your ice cubes!!!
Then you throw in some frozen pineapple, coconut milk, and booze, and you have got one amazing and wonderful cocktail, friends!
- 4 cups diced watermelon (about a quarter of a large watermelon), frozen
- 12 oz frozen pineapple
- 13.66 oz lite coconut milk
- 1 cup rum
- Combine all the ingredients in a blender and serve.
