Veggies: To make this casserole, you will need a head of green cabbage and a yellow onion. A little unsalted butter is also needed for sauteeing the veggies.
Mix-Ins: You will also need full-fat mayonnaise and a can of cream of mushroom soup.
Seasoning: Set out the salt, pepper, and garlic powder.
Toppings: For this recipe, grating the cheddar cheese yourself rather than buying pre-shredded cheese is recommended. You will also need Ritz crackers, or your favorite buttery crackers, and more unsalted butter.
How to Make Cabbage Casserole
STEP ONE: Preheat the oven to 350 degrees F and grease a 2 1/2-quart baking dish. Using a deep-sided pan, melt the butter, then add the chopped cabbage and diced onion. Cook the cabbage for 5-8 minutes.

STEP TWO: Season the cabbage with salt, pepper, and garlic powder and cook for another minute. Spread the sauteed cabbage evenly in the prepared baking dish.

STEP THREE: In a small bowl, mix the mayo and cream of mushroom soup together. Spread the mixture over the cabbage, then sprinkle the shredded cheese on top.

Cabbages like Napa and Savoy have much softer leaves that will be absolutely lost in the creamy sauce, which is why they are not recommended for this recipe.

Ingredients
- 2 tablespoons unsalted butter
- 8 cups green cabbage roughly chopped
- 1 medium yellow onion peeled and finely diced
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 10 ounces cream of mushroom soup
- ¼ cup mayonnaise (full-fat)
- 1 cup cheddar cheese shredded
Topping
- 20 Ritz crackers roughly crushed (see note)
- 4 tablespoons unsalted butter melted
Instructions
- Preheat the oven to 350 degrees F. Lightly coat the inside of a 2.5-quart casserole dish with non-stick cooking spray. Set aside.
- Place a large deep-soded skillet over medium heat and add the butter. Once melted, add the cabbage and onion. Cook, stirring occasionally, for 5-8 minutes until the cabbage has softened, but is not fully cooked. Add the salt, garlic powder, and pepper, sitre, and cook for 1 more minute.
- Transfer the cabbage to the prepared baking dish and spread it into an even layer.
- In a small mixing bowl, whisk together the cream of mushroom soup and mayo. Spread this mixture evenly over the cabbage. Sprinkle the cheese all over the soup mixture.
- In a medium mixing bowl, stir together the crushed crackers and melted butter until the crackers are moistened. Sprinkle evenly over the cheese.
- Bake for 30 minutes or unitl gold brown. Remove from the oven and serve warm with your favorite meals.
Notes
- You can use a 9×13 (3-quart) baking dish for this recipe if you don’t have a 2.5-quart dish on hand.
- I used regular Ritz crackers for the topping, and it was the perfect amount of salt with a bite of cabbage. I would not suggest a low-sodium cracker unless you very generously salt the cabbage or use salted butter and salt the cabbage to taste.
