But my newest obsession is making Parmesan zucchini in the air fryer. It’s crispy, cheesy, and incredibly easy to make. I never thought I’d say it, but even my kids ask for these zucchini chips on a regular basis. Zucchini has always been one of my favorite vegetables because its mild flavor pairs perfectly with Parmesan cheese. I usually grill zucchini throughout the summer, but after trying it in the air fryer, I loved how quickly it developed golden edges and a crunchy topping with very little oil.

Ingredients
Zucchini – you’ll want to cut 2 to 3 medium zucchini into thin rounds. The thinner you cut, the crisper and “chip-like” they’ll be. The most important thing is to make sure you cut your zucchini slices uniformly. You want them to fry evenly!
Panko Breadcrumbs – while you can absolutely use regular breadcrumbs, I’ve found that for the BEST air fryer zucchini chips, you’ll want to use panko breadcrumbs. They give a little extra crunch that is simply perfect!
Seasoning – for your delectable zucchini seasoning, you’ll need grated parmesan cheese, onion powder, garlic powder, salt, and olive oil.

How to Make Air Fryer Zucchini with Parmesan
The air fryer turns Parmesan and panko-coated zucchini into crispy, golden bites with very little oil. Serve them warm as a side dish, snack, or with our favorite honey sriracha sauce for dipping.
STEP ONE: Prep the zucchini and mix the coating – Slice the zucchini into even rounds and toss them with olive oil. This helps the Parmesan and panko mixture stick to every slice. In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, and salt until evenly mixed.
STEP TWO: Arrange in a single layer and top – Place the zucchini slices in the air fryer basket in a single layer with space between each piece. Avoid overlapping the slices so the hot air can circulate properly and crisp the coating. Depending on the size of your air fryer, you may need to cook in batches. Sprinkle the breadcrumb mixture over the zucchini, pressing lightly if needed to help it stick.
STEP THREE: Air fry until golden – Cook until the coating begins to turn golden. Flip the zucchini, add the remaining breadcrumb mixture, and continue cooking until both sides are crisp and lightly browned.
STEP FOUR: Garnish and serve – Transfer the zucchini to a serving plate and sprinkle with fresh parsley. Serve immediately while the coating is at its crispiest.

Storage and Reheating
Air Fryer Parmesan Zucchini is at its crispiest right after cooking, but leftovers can still be enjoyed the next day. Allow the zucchini to cool completely before transferring it to an airtight container. Store leftovers in the refrigerator for up to 3 days.
The best way to restore the crispy coating is to reheat the zucchini in the air fryer at 375°F for 2-4 minutes. Arrange the slices in a single layer and heat just until warmed through.
I don’t recommend using the microwave if possible. It will warm the zucchini, but the breadcrumb coating will lose its crunch and become soft.

Can I use regular breadcrumbs instead of panko?
Yes. Regular breadcrumbs will work, but panko breadcrumbs create a lighter, crispier coating. If you have panko on hand, it’s the best choice for achieving that crunchy texture.
Do I need to peel the zucchini first?
No. The zucchini skin becomes tender as it cooks, helping the slices hold their shape. Just wash the zucchini well before slicing.
Can I make this recipe gluten-free?
Absolutely. Swap the panko breadcrumbs for your favorite gluten-free panko or gluten-free breadcrumbs. Be sure to check that any packaged seasonings are certified gluten-free if needed.
Why is my zucchini not getting crispy?
Zucchini naturally contains a lot of moisture. For the crispiest results, pat the slices dry before coating them, cut them into even rounds, and cook them in a single layer so the hot air can circulate around each piece.

Air Fryer Parmesan Zucchini
Ingredients
- 3 zucchini sliced
- 1 tablespoon olive oil
- ½ cup Italian seasoned panko bread crumbs
- ¼ cup Parmesan cheese grated
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- Fresh parsley finely chopped, for garnish
- Honey Sriracha Sauce for serving
Equipment
Method
- Preheat the air fryer to 400 degrees F.
- Place 3 zucchini cut into slices, in a mixing bowl and drizzle with 1 tablespoon olive oil. Toss to coat.
- In a medium bowl, mix together 1/2 cup Italian seasoned panko bread crumbs, 1/4 cup Parmesan cheese , 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1/4 teaspoon salt.
- Place some over the zucchini slices in an even layer in the basket of your air fryer. There should be no overlapping. (I usually cook them in 2 batches.)
- Top the zucchini with some of the bread crumb mixture until there is a nice crust on top.
- Cook for 6 minutes. Flip the zucchini over and top with more of the bread crumb mixture. Cook for another 6 minutes until golden brown.
- Remove from the air fryer basket and serve warm, sprinkled with chopped Fresh parsley and Honey Sriracha Sauce for dipping.
Aubrey’s Tips
- Serving size is about ½ cup, which is equal to 8-10 slices depending on thickness.
- Pat the zucchini dry before tossing with the oil to help the coating get nice and crispy.
- Give the zucchini slices a little space in the air fryer basket. Cooking in batches is worth it for that golden, crunchy texture.
- Air fryer zucchini is best enjoyed right away while it’s hot and crispy.
