Air Fryer Parmesan Zucchini is coated in crispy panko breadcrumbs & savory Parmesan cheese for the perfect crunchy bite. An easy side dish with big flavor.

Place 3 zucchini cut into slices, in a mixing bowl and drizzle with 1 tablespoon olive oil. Toss to coat.
In a medium bowl, mix together 1/2 cup Italian seasoned panko bread crumbs, 1/4 cup Parmesan cheese , 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1/4 teaspoon salt.
Place some over the zucchini slices in an even layer in the basket of your air fryer. There should be no overlapping. (I usually cook them in 2 batches.)
Top the zucchini with some of the bread crumb mixture until there is a nice crust on top.
Cook for 6 minutes. Flip the zucchini over and top with more of the bread crumb mixture. Cook for another 6 minutes until golden brown.
Remove from the air fryer basket and serve warm, sprinkled with chopped Fresh parsley and Honey Sriracha Sauce for dipping.
Notes
Serving size is about ½ cup, which is equal to 8-10 slices depending on thickness.
Pat the zucchini dry before tossing with the oil to help the coating get nice and crispy.
Give the zucchini slices a little space in the air fryer basket. Cooking in batches is worth it for that golden, crunchy texture.
Air fryer zucchini is best enjoyed right away while it's hot and crispy.
