Tips for Success
- This recipe requires fresh herbs for flavor. Save the dried herbs for seasoning casseroles and grilled meat.
- As with most blended recipes, chicken salad is even better on day two!
- Make extra goddess sauce without the chicken and use it as a dip for chips and crackers or drizzle it over grilled veggies.
- Toss in a few slices of ripe avocado for additional creaminess and nutrition!
- Forget the bread and serve this chicken salad as a Romaine lettuce wrap!
- Green grape halves or golden raisins work well if you want to add fruit.
- We’re making this recipe “chunky” with diced chicken, but shredded or finely-chopped chicken is also great!
What is a Green Goddess Chicken Salad?
Green Goddess Chicken Salad is a healthy, inviting variation of traditional chicken salad. Substituting some of the mayonnaise for Greek yogurt for creaminess with fewer calories, this salad relies on fresh herbs, onions, lime, and cloves to give it a distinct, delicious flavor (the dill and onion might remind you of ranch dressing).
How Long Will Chicken Salad Keep?
Typically, fresh chicken salad lasts 3 or 4 days in the fridge, but this herby Chicken Salad is so yummy that you’ll probably eat it up by the second day! When you store it, seal it in an airtight container and place it in the back of the fridge, where it will stay at an even cold temperature until you’re ready to gobble it up!
