STEP TWO: Sprinkle salt, pepper, and red pepper flakes (if using) over the broccoli and stir well to mix.

Tips for Success
- After washing the broccoli, make sure it’s pretty dry before adding olive oil and roasting it. The broccoli can be a little damp, but soggy broccoli won’t roast well in the oven!
- Avoid cutting the broccoli into small pieces- they’ll crisp to nothing! Arrange 1-inch florets with space between them so they crisp well.
- Store leftover broccoli in an airtight container in the fridge for up to three days.

What’s the secret to roasting vegetables?
Roasting veggies brings out an incredible depth of flavor, and in the fall, when the temps are chilly, roasted veggies taste even more amazing! There are a few things we can all do to ensure we make the most delicious roasted veggies, starting with size. Be sure to cut whatever veggies you’re roasting to roughly the same size so they roast evenly. Secondly, be sure to coat the veggies in oil so they crisp without drying out. Lastly, leave a little space between the veggies so they have airflow that will allow them to crisp rather than trapping moisture and steam.

Is roasted broccoli still healthy?
Broccoli is a veggie that is loaded with nutritional goodies, and you’re sure to get at least some of them no matter how you enjoy your broccoli! I think most of us have heard that steaming veggies is the best way to get almost, if not all, of the vitamins and minerals in veggies, but did you know that you’ll still get specific vitamins depending on how you cook them? When you roast broccoli, you’ll get the water-soluble vitamins that would have been cooked away while boiling, and by adding olive oil to roasted broccoli, you’ll get more of the fat-soluble vitamins. No matter how you enjoy your broccoli, you’re sure to get lots of nutritious goodness!
