Well, it’s April…..and spring is officially here. And let me just say I am READY for it! It’s been a long, gray winter…..and honestly, nothing makes me happier at this time of year than knowing that summer is just around the corner.
Time to start thinking about summer plans and vacations, time to get the kids signed up for some activities (eep!), and most importantly, time to start looking forward to summer cookouts with friends. There’s nothing quite like firing up the grill and spending a summer night with good friends, good food, yummy drinks, and nothing to do but enjoy our time together.
I love having friends over and, of course, I love feeding them. I especially enjoy sharing new recipes, and when they’re as delicious as this Boozy Tropical Fruit Salad, it’s a no-brainer! Every cookout needs a good fruit salad, and I think we can all agree that fruit doused in rum will ALWAYS be good. In fact….it may just be the ONLY fruit salad I ever want to eat again!
It would pair especially well with chicken, fish, or burgers. But if you’re anything like me, you’ll find a way to fit this delicious salad into every meal! It would also be perfect for a cocktail party or dessert….and I’m definitely planning to try a kabob version, too. (Can you tell I’m committed to making it happen as often as possible?) So. Ingredients
- 1 c. pineapple chunks
- 1 c. mango chunks 1 large mango
- 1 c. strawberries halved or quartered
- 1 c. kiwi sliced
- ⅓ c. roasted coconut chips or coconut flakes
- ½ c. Malibu rum
- 1 Tbsp. lime juice
- 1 tsp. poppy seeds
Instructions
- Combine fruit in a medium mixing bowl.
- In a separate small bowl, combine rum, lime juice, and poppy seeds.
- Pour mixture evenly over fruit and toss to coat.
