I think we all wish we could eat great food that was great for us all of the time, but settling for a few days out of the week is better than none. I know we’ve all been burned before by food that was supposed to be good for us but tasted horrible. Thankfully, this power-packed Super Food Smoothie came into my life with its amazingly fresh fruit taste and minimal time to make it! Tossing in frozen fruit, which is perfect for me because then nothing ever goes to waste, spinach, which lasts forever, and delicious walnuts are so quick, and then I’m off to the races, full of great energy!

Fruit: Pick up a pomegranate, raspberries, a banana, blueberries, and peaches or nectarines to make this smoothie. Fresh and frozen fruit are great options, so choose between one or the other or choose a mix of fresh and frozen.

Veggies: A handful of fresh spinach is also needed to make this smoothie.

Nuts: Don’t forget to include a serving of walnuts for added vitamins and a touch of protein.

Coconut Milk: You will need a can of light coconut milk for this recipe.

Extra: You may also need water or ice for this smoothie. If using frozen fruit, you may need water to help everything blend well, or if using fresh fruit, you may need ice.

How to Make Super Food Smoothie

STEP ONE: Add the coconut milk, pomegranate, raspberries, blueberries, bananas, spinach, walnuts, and peaches or nectarines to a blender.

STEP TWO: If using frozen fruit, add water to help everything blend well. If using fresh fruit, add some ice to chill the smoothie. Blend the ingredients until everything is smooth.

STEP THREE: Pour the smoothie into a glass, garnish with more pomegranate seeds and a few berries, and enjoy!

Tips for Success

  • When making this smoothie, use fresh fruit, frozen, or a mix of the two. Some fruits are seasonal, so frozen may be the only way to get them, which is great because you can store them in the freezer and not worry about them going bad!
  • Fresh spinach works best in this recipe and is much faster to blend than frozen spinach, which must be thawed and drained before use. Chopped kale leaves can also be used in place of spinach.
  • Light coconut milk is used in this recipe to reduce the calories in the smoothie, but regular, full-fat coconut milk can also be used.

Equipment

Ingredients
  

  • ¼ cup pomegranate seeds
  • ½ cup blueberries
  • ½ cup raspberries
  • ½ cup peaches or nectarines
  • 1 large banana peeled
  • ¼ cup walnuts
  • 1 cup light coconut milk
  • 1 large handful spinach
  • Water as needed
  • Ice as needed

Instructions
 

  • Add all ingredients to your blender. If using frozen fruit, add enough water to blend easily. If using fresh fruit, add enough water to blend along with some ice to make the smoothie cold.
  • Cover and blend until smooth.
  • Pour into glasses and garnish with additional berries or pomegranate seeds.
