Not only am I in love with Oreos, cheesecake, and sweet raspberries, but I’m also in love with how special my family feels when I make it for them. Mixing crushed Oreo cookies with melted butter, whipping together cream cheese, sour cream, and sugar, and then stirring up a great fresh raspberry sauce is my idea of a good time, and eating it is a dream come true!

Ingredients

Crust: To make this chocolate crust you will need crushed Oreos and a few tablespoons of melted butter.

Wet Items for the Filling: Set out full-fat cream cheese to soften, along with eggs and sour cream. Save a little sour cream to also use as topping for the cheesecake.

Dry Items for the Filling: You will also need all purpose flour and granulated sugar to make the filling.

Raspberry Sauce: To make this beautiful sauce you will need fresh raspberries, water, granulated sugar, and cornstarch.

Garnish: Purchase more fresh raspberries to sprinkle over the finished cheesecake.

How to Make Raspberry Cheesecake

STEP ONE: Preheat the oven to 375 degrees F. In a medium bowl combine the crushed Oreos and melted butter and mix well. Press the crumb mixture to the bottom and sides of a springform pan to make the crust and bake for 10 minutes. Once out of the oven, set the crust aside to cool.

STEP TWO: Puree the raspberries in a food processor and strainer them through a mesh sieve to remove the seeds. Then combine the raspberry puree, sugar, water, and cornstarch in a medium saucepan and bring to a boil. Lower the heat to a simmer and continue to cook the mixture for 5 minutes, whisking often, until a thick sauce forms. Remove the pan from the heat and let the sauce cool.

STEP THREE: Using a mixer or a large bowl with beaters, mix the cream cheese, most of the sour cream, eggs, and sugar. Stir the flour into the mix.

STEP FOUR: Pour half of the cream cheese mix on top of the cooled crust and swirl in 1/3 of the raspberry syrup. Add the remaining cream cheese mix and swirl in another 1/3 of the raspberry syrup. Bake the cake at 375 degrees F for one hour, or until a toothpick comes out clean.

STEP FIVE: Once the cheesecake is out of the oven and has cooled a little, place it in the refrigerator for 4 to 6 hours or overnight. (It won’t look super pretty right now but don’t worry. You still need to add the toppings.)

STEP SIX: To finish the cake, smooth a thin layer of sour cream over the top, followed by a layer of raspberry syrup. Garnish with fresh raspberries.

Tips for Success

  • Crush Oreos using a food processor or toss them into a Ziplock bag and use a rolling pin or other heavy object to gently crush the cookies. When pressing the Oreo crust into the springform pan, it won’t come all the way up the sides, reaching instead about halfway up so that you see a delicious layer of crust, followed by a layer of cheesecake.
  • If you prefer a classic graham cracker crust, substitute 2 1/2 cups graham cracker crumbs for the Oreos and add 2 tablespoons of sugar. Mix with the melted butter and proceed as directed.
  • Be sure to carefully strain the seeds from the raspberry syrup after cooking to create a great smooth syrup.
  • Chill the cheesecake well, for at least 4-6 hours, to allow the cheesecake to firm up and to make slicing easier.

Oreo Crust

  • Preheat the oven to 375 degrees F.
  • Mix melted butter and crushed Oreo cookies in a medium mixing bowl until the cookies are moistened.
  • Pour the Oreo mixture into a springform pan and press the cookies evenly over the bottom and sides of the pan to form the crust.
  • Bake for 10 minutes. Remove from the oven and set aside to cool slightly.

Raspberry Sauce

  • While the crust cooks, puree the raspberries in a food processor until smooth. Strain the puree through a fine mesh sieve to remove the seeds.
  • Transfer the raspberry puree to a medium saucepan. Whisk in the sugar, water, and cornstarch.
  • Place the saucepan over medium-high heat and bring to a boil. Then turn the heat down to low and simmer for 5 minutes, whisking continuously.
  • Remove the sauce from the heat, it will thicken as it cools.

Cheesecake Filling

  • Using a hand mixer, beat the cream cheese, sour cream, sugar, and eggs together in a large mixing bowl until smooth. Mix in the flour.
  • Pour 1/2 of the cheesecake mixture into the Oreo crust and spoon 1/3 of the raspberry sauce over the filling. Use a knife or skewer to swirl the sauce into the filling. Repeat with the remaining filling and 1/3 of the sauce.
  • Bake at 375 degrees F for 1 hour or until a toothpick comes out clean.
  • Remove from the oven and let cool to room temperature. Chill in the fridge for at least 5 hours to overnight.
  • Once the cheesecake has chilled, spread a thin layer of sour cream over the top. Then spread the rest of the raspberry sauce over the sour cream and top with fresh raspberries. Cut into 12 slices and serve.

Notes

  • The raspberry sauce can be made up to 1 day ahead of time. Store it in an airtight container in the fridge until ready to use.
  • Store any leftovers in the fridge in an airtight container. 
  • This cheese can be frozen for up to 2 months once chilled and topped with sour cream and raspberry sauce. Thaw in the fridge overnight and top with fresh raspberries before serving.
