These RASPBERRY BELLINIS are an easy cocktail that is perfect for brunch!
I just love brunch. Maybe it’s because I’m not much of a morning person or maybe it’s the casual social aspects of the meal. Or maybe it’s because I can have cocktails with breakfast.
Yep. I’m going with cocktails for breakfast! Definitely the cocktails.
These Raspberry Bellinis are perfect for brunch for two reasons. First, there are only three ingredients which means they are super simple to make. No muss. No-fuss.
Second, you can easily make a big pitcher of them. Because who wants to be mixing cocktails when they could be eating this amazing Cinnamon Streusel French Toast Casserole or this incredible Ham and Egg Brunch Braid? Not this girl!
To make these bellinis I put a small scoop of raspberry sorbet in each glass. I also added a few fresh raspberries to each glass.
Then I filled the glass up with sparkling pink Moscato. I found it to be the just the right balance of bubbly sweetness. Plus, the blushing pink color went perfectly with the raspberries.
I told you it was easy!
If you want to make this by the pitcher, I would add 2-3 regular scoops of sorbet to the pitcher and a half pint of raspberries. Then fill the pitcher up with the Moscato.
This cocktail is so bright and refreshing and perfect for brunch! I’m planning to make this for Easter and Mother’s Day. I know it’s going to be a hit.
And, if you have kids at brunch you can also easily make this into a mocktail for the littles. Simply swap the Moscato for cranberry ginger ale or a raspberry sparkling seltzer. My son and his cousins love when I serve them mocktails just like the adults. It’s makes the meal just a little more special.
Ingredients
- 1 tablespoon raspberry sorbet
- 3-4 fresh raspberries
- 4 oz Sparkling pink Moscato or however much it takes to top off
Instructions
- Place sorbet in a champagne flute.
- Add raspberries.
- Top off with Moscato.
