I know there are a ton of different dips to choose from, but when we’re craving something fresh, light, and fast that goes with everything, this is the salsa we pick. This salsa isn’t just an amazing dip; it’s also amazing as a topping for our favorite tacos, grilled chicken, shredded beef, or black bean burgers. Creamy, mouthwatering avocados mixed with various crisp veggies and herby cilantro give this salsa a satisfying texture where each ingredient shines, rather than flavoring the avocados, like guacamole.

Veggies: To make this salsa, you will need a few ripe avocados to dice, a couple of Roma tomatoes to dice, a red onion to chop, a jalapeno to de-seed and chop, and a couple of limes to juice.

How to Make Avocado Salsa

STEP ONE: Add the diced avocados, tomatoes, red onion, jalapeno, cilantro, and salt to a medium mixing bowl. Then squeeze the limes over everything until all the juice is released.

STEP TWO: Gently mix the salsa and adjust the seasoning with more salt (if needed) to your taste. Serve it immediately with tortilla chips for dipping or topping your favorite tacos.

Tips for Success

  • When stirring the salsa, toss it just enough to mix the ingredients, not mash them.
  • De-seeding the jalapeno removes the heat while adding the wonderful flavor to the salsa. If you prefer, leave the seeds in for a kick of heat.
  • The lime juice certainly adds a lot of great flavor, but also slows down the browning of the avocados, so be sure to add all of the lime juice, especially if you are planning on leftovers!
  • Any leftover salsa can be stored in the fridge for up to 2 days. Cover the bowl with plastic wrap.

Can I make this salsa in advance?

Avocado salsa can be partly made in advance and finished right before serving. Add the chopped and diced veggies and cilantro to a large bowl, but wait to add the avocados. Store the salsa in a sealed container, and when you are ready to serve, add the diced avocados, lime juice, and salt. Once avocados are exposed to air, they oxidize and turn brown, so you want to wait until the last minute to add them. Keep leftovers in an airtight container to maintain the freshness of this salsa.

Ingredients
  

  • 5 ripe avocados pitted and diced
  • 3 Roma tomatoes seeded and diced
  • ½ cup cilantro leaves chopped
  • ½ small red onion peeled and diced (about 1/4 cup)
  • 1 jalapeno seeded and diced
  • ½ teaspoon salt
  • 2 limes cut in half

Instructions
 

  • To a medium mixing bowl, add the avocado, tomatoes, cilantro, onion, jalapeno (add the seeds for more heat), and salt. Squeeze the limes over the other ingredients.
