Ingredients
Wraps: Large flour tortillas are easy and economical for making pinwheels!
Protein: Club sandwiches are packed with protein! For these pinwheels, we use deli turkey, bacon and provolone cheese, but you can mix & match other meats and cheeses if you like!
Veggies: Thin slices of a nice, ripe tomato and crisp, green bibb lettuce add flavor and crunch as well as vital nutrients!
Condiment: Mayo is the condiment of choice for club sandwiches! Of course, if you are concerned about keeping the pinwheels chilled, butter makes a nice substitute.
How to Make Club Sandwich Pinwheels
STEP ONE: Lay out the tortillas and spread half of the mayonnaise evenly over each one. Next, layer each tortilla with turkey and provolone, leaving an edge on one side of the tortilla.
STEP TWO: Place the tomato slices and bacon crumbles down the center and top each one with a lettuce leaf. Try to keep the fillings thin and uniform.
STEP THREE: Roll each tortilla very tightly towards the side with the edge without toppings. (Rolling away from you tends to work best.) Wrap each tortilla log tightly in plastic wrap and refrigerate for at least 1 hour.
STEP FOUR: When ready to serve or prep school lunches, remove the roll ups from the fridge and unwrap them. Place toothpicks every 1/2 inch to 3/4 inch down the top of the tortillas to hold them together. Then, cut into slices with a serrated knife, leaving the toothpick in the center of each slice (about 8 per tortilla). Arrange on a party platter or pop into lunchboxes!
Tips for Success
- Don’t overload the tortilla. Make sure your stuffing ingredients are in thin, even layers.
- Refrigerating the pinwheel wrap before cutting helps to keep its shape.
- Use butter instead of mayo if you’re concerned about keeping it chilled.
- Pinwheel sandwiches can be made in advance, just don’t use the tomatoes (or they will make your pinwheels soggy), and wait until the morning of to cut the rolls into pinwheels.
How Do You Hold Pinwheels Together?
Pinwheel sandwiches hold together easier than you might imagine, but there are a few tips and tricks to keep them from falling apart! The first is to use a large-size flour tortilla – you need enough “roll” to hold the fillings in place. The second tip is not to overload the tortilla with too many fillings. A small spread goes a long way! The third tip and the real key to perfect pinwheels is this: Once the tortillas are filled and rolled, cover tightly with plastic wrap and chill for at least an hour before cutting. This makes all the difference!
What is a Club Sandwich?
Club Sandwiches originated over a hundred years ago at the Union Club on Fifth Avenue in New York City. They called it a “clubhouse” sandwich. The classic clubhouse consists of turkey and bacon (and sometimes ham), lettuce, tomato and cheese layered between three – yes, 3 – sliced of lightly toasted bread with a slathering of mayo. The sandwich can be served cold or mostly cold with warm meat. But it’s that third, middle slice of bread that makes the Club Sandwich unique!

Ingredients
- 2 large flour tortillas
- 4 tablespoons mayonnaise
- 6 slices provolone cheese
- 6 slices deli turkey
- 3 strips bacon cooked and crumbled
- 1 tomato cut into 6 thin slices
- 2 leaves bibb or butter lettuce rinsed and dried
Instructions
- Evenly spread 2 tablespoons of mayonnaise on each tortilla. Trying to keep a uniform thin layer, arrange half of the provolone cheese and turkey on each tortilla, leaving an edge to one side.
- Place half the tomato slices and bacon down the center of each tortilla, and then top with a lettuce leaf. Roll each tortilla very tightly toward the edge without toppings.
- Roll the tortilla logs in plastic wrap and twist the ends to keep them snug. Refrigerate for 1 hour.
- Place toothpicks every 1/2 inch to 3/4 inch down the top of the rolls. Using a serrated knife, cut the tortillas into slices, leaving the toothpick in the center of each slice (about 8 slices per tortilla).
- Arrange the pinwheels on a platter for serving, and refrigerate until ready to serve. Cover the platter with plastic wrap if you will be storing them for more than 1 hour.
