Summer is the best time for grilling. When it’s nice out, we have our grill on almost every night making something new and delicious. This week it’s these amazing grilled ranch potatoes that are making their way to the dinner table. Grilled potatoes are by far my preferred version of this classic side dish staple, especially when they are seasoned with flavors of ranch and sprinkled with hearty toppings like cheese and bacon. I just can’t get enough of them!

I love loading up these potatoes with all of the toppings and serving them alongside Grilled BBQ Chicken Legs because everyone deserves to live their best life in the summer and enjoy all the fresh and delicious food while enjoying quality time with friends and loved ones. I often find myself holding off on some of my favorite meals, letting my family enjoy them without me because I don’t want to endure the intense pain that follows.

How to Make Grilled Ranch Potatoes

As long as you have a sheet of heavy-duty foil and a ready-to-go grill, you’ll have these ranch potatoes cooked in no time. You’ll love how easy the recipe is almost as much as you love how good the flavor is.

  1. Add potatoes to a large mixing bowl. Drizzle with oil and stir to coat. Add salt, pepper, and ranch mix. Stir until the potatoes are well coated.
  2. Transfer potatoes to a square sheet of heavy-duty aluminum foil. Group together in the center of the foil. Fold one side over the potatoes and then the other side so they are overlapping. This will create a long rectangle. Fold up the ends to seal everything in.
  3. Place potato packet on the hot grill, seam side up. Grill for 10 minutes. Flip and grill for another 10 minutes. Remove from heat.
  4. Place potato packet on a serving plater and cut an uppercase I in the middle of the foil. Carefully open the sides of the foil pack and fold them down. Sprinkle the potatoes with cheese, bacon, and parsley. Serve immediately.

I can’t tell you how many times I skipped the bbq and mac and cheese, the leaded grilled ranch potatoes, and pretty much everything good about summer parties. I was finding myself picking through food tables, and coming back with a sad excuse for a dinner plate, and leaving with a still mostly empty stomach. I watch enviously as everyone around me raved about the food telling me I had to try some, while all I could think about was if it would be worth that awful and uncomfortable feeling of heartburn after. That’s when I finally got fed up.

Ingredients
  

  • 2 pounds red potatoes (see note)
  • 2 tablespoons vegetable oil
  • 3 tablespoons ranch dressing mix (1-ounce packet)
  • ¼ teaspoon salt
  • teaspoon pepper
  • ½ cup cheddar cheese shredded
  • 3 strips bacon cooked crispy and crumbled
  • 1 tablespoon parsley chopped

Instructions
 

  • Preheat grill to medium heat or 400 degrees F.
  • Add potatoes to a large mixing bowl. Drizzle with oil and stir to coat. Add salt, pepper, and ranch mix. Stir until the potatoes are well coated.
  • Transfer potatoes to a square sheet of heavy-duty aluminum foil. (Don't use the regular kind, it'll break!) Group together in the center of the foil. Fold one side over the potatoes and then the other side so they are overlapping. This will create a long rectangle. Fold up the ends to seal everything in.
  • Place potato packet on the hot grill, seam side up. Grill for 10 minutes. Flip and grill for another 10 minutes. Remove from heat.
  • Place potato packet on a serving plater and cut an uppercase I in the middle of the foil. Carefully open the sides of the foil pack and fold them down. Sprinkle the potatoes with cheese, bacon, and parsley. Serve immediately.

Notes

  • If using mini red potatoes, cut in half lengthwise. If using regular red potatoes, cut into quarters (bite-sized pieces).
  • I cooked my bacon in the oven while the potatoes grill. You could cook your bacon on the grill if you prefer. Once the cheese is added to the potatoes, place the plate in the warm oven to help the cheese melt.
  • You can serve these potatoes right out of the foil or transfer them to a serving bowl before adding toppings.
