Let me just start by saying, I love cookies. I love baking them and I, along with my whole family, enjoy eating them. Lately, we have been baking these almond joy cookies which are phenomenal. However, when I have a chocolate craving it’s brownies that have a hold over my heart.

If given the choice between cookies and brownies, I would always pick brownies. A warm chewy, chocolatey brownie bar just has something that most cookies cannot compete with. Unless, of course, you have the best of both worlds and indulge in a chocolate brownie cookie.

This double chocolate brownie cookie recipe has just the right combination of chewy brownie and beautifully baked cookie. The melted chocolate morsels bring a creaminess to each bite. I believe every chocolate brownie lover will be won over after trying these.

INGREDIENTS AND VARIATIONS

Nuts: There are two types of people. Those who like nuts in their brownies and those who do not.  I happen to love the added crunch of walnuts baked into or on top of my brownies.

So if you are like me, feel free to add some walnuts to this brownie cookie recipe. (Or whichever type of nuts you prefer.)

Chocolate Morsels: Feel free to use whatever type of chocolate morsels you prefer. Semi-sweet, white chocolate, even caramel or butterscotch morsels! Chocolate cookies are so versatile it’s almost impossible to mess them up! As long as you are adding flavors that you love, you’re good to go!

HOW TO MAKE BROWNIE COOKIES

  1. Preheat your oven to 375 degrees F.
  2. While it is heating, put 3/4 cup of chocolate chips in a heavy saucepan and heat it at the lowest possible heat. Once the chips begin to melt, remove the pan from the heat, and stir the chocolate. Return the pan to the heat in short intervals while continuing to stir until the chocolate chips are smooth and completely melted. Set the pan aside.
  3. In a small bowl, combine your dry ingredients (flour, baking soda, and salt) and set it aside.
  4. In a large bowl, beat your butter, white and brown sugar, and vanilla together. Add your eggs in, one at a time, beating the mix well after each. Once incorporated, beat in your melted chocolate.
  5. Take the dry ingredient mixture from your small bowl and beat it into the chocolate mixture in your large bowl.
  6. Lastly, stir in the remained 3/4 cup of chocolate chips by hand.
  7. Drop the dough into rounded tablespoons on a silicone mat lined baking sheet or an un-greased baking sheet.
  8. Place your baking sheet into the oven and cook for 8 minutes. The cookies are done when the edges are set but the middle is still slightly soft.
  9. Remove the baking sheet from the oven and let the cookies stand for 2 minutes. Then transfer them onto a wire rack to continue cooling. The cookies will set up and they cool.

HOW TO MAKE COOKIES FROM BROWNIE MIX

There is nothing wrong with saving time! We are all busy and sometimes it is just easier to buy a box of pre-made brownie mix and save yourself a few minutes.  This alternate semi-homemade option tastes just as amazing– trust me. I have done it.

Simply replace steps 1 through 5 in the recipe, and instead follow the directions on the box of the brownie mix. (Use whichever kind you like, just not a “family size” box.) Once your batter is prepared, you can mix in the melted chocolate and chocolate chips and continue following the recipe below.

To save even more time, you may even consider opting to make brownie cookie bars. Take your cookie dough and pour it into a square pan. Then cut your finished cookies into bars instead of scooping the dough onto cookie sheets.

Just be sure to consult the directions on your brownie mix box as baking times and temperatures may vary. The end result may look different, but it will taste just as great!

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat, or coat with non-stick cooking spray.
  • Place 3/4 cup chocolate chips in a small saucepan. Place on the stove over the lowest possible heat. Once chips begin to melt, remove them from the stove and stir. Return to heat for a few seconds at a time stirring until smooth. Set aside.
  • In a small bowl, combine flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat butter, sugar, and brown sugar together until fluffy, about 2 minutes.
  • Add eggs, one at a time, beating well after each addition. Add vanilla and mix to combine.
  • Add melted chocolate and mix until incorporated. Add flour mixture and mix until just combined.
  • Stir in the remaining 3/4 cup chocolate chips by hand. Drop cookie dough by rounded tablespoons on the prepared baking sheet.
  • Bake for 8 minutes, or until sides are set and the middle is still slightly soft.
  • Remove cookies from oven and let rest on cookie sheet for 2 minutes. Then transfer to a wire rack to cool completely.
