This Cherry Cola pulled pork is one of my favorite Summertime recipes! It’s so easy to whip up this set it and forget it crock pot meal and the flavor is spot-on. After cooking low and slow all day, the pork becomes so juicy and fall-apart tender it melts in your mouth. I love to serve it up on a bed of steamed white rice, or on a burger bun topped with our favorite BBQ sauce.

Somehow Spring is slipping away so quickly! But then, around here, it doesn’t exactly feel like we’ve even gotten to Spring yet. We always get sporadic, completely unpredictable weather in Utah and the local joke is that if you don’t like the weather, just wait 10 minutes. Lately, it’s been crazier than ever. I swear we had sun, wind, rain, snow AND hail in a single day last week.
To make up for the random, not-so-pre-Summer weather, I’ve been making Summer eats galore and I don’t feel even a little bit bad about it.

Crock Pot:Â I love this crock pot! The lid is very secure and I can pack it up and take it on the go if I’m heading to a potluck. This slow cooker is a workhorse in my kitchen and has worked great for years!
Tongs:Â A good pair of tongs is a kitchen essential. I like having a couple sizes – a longer set for grilling and a shorter set for stovetop cooking.
Liquid Smoke: Adding liquid smoke to slow cooker meats gives that cooked outdoors flavor profile without ever lighting the grill.
Ingredients
- 1 4-5 pound pork shoulder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 4 cans Cherry Coca Cola
- 1 cup bbq sauce store-bought or homemade
Instructions
- Place pork in a greased slow cooker. Rub with salt, pepper, garlic powder, onion powder, and liquid smoke.
- Add cola to the slow cooker, cover, and cook for 8 hours on low.
- Shred with two forks, stir in bbq sauce, and serve over rice or on a burger bun with more bbq sauce.

I prepared exactly as written, and the meal was a hit! I bought 5 pounds of meat, but then cut off a lot of the fat before cooking. My 7 qt. crockpot would have held more meat, and it would have been great for leftovers. Next time, I’ll buy 7 pounds. Also, before shredding, I pulled the meat out of the liquid, and removed as much fat as I could before shredding and adding back to the liquid for serving. Five starving adults were well fed with a little leftover. I served over white rice with some lime juice and cilantro added to the cooking water. I also had shredded cheese and some guacamole that I pick up from a local fast casual taco chain.

I am so glad to see that it was such a hit even with the slight disappointment of a small amount of leftovers. It is definitely worth going with 7 pounds next time especially because I love to have a good pulled pork sandwich for leftovers. Great idea with the addition of the citrus cilantro rice, we love a good fresh mex dinner!!
