I have a secret…….
I LOVE cheese. I feel like all of my posts start with I LOVE __________. I guess I have a lot of food LOVES. Maybe that’s why my “baby” is almost 5 and I’m still struggling with the “baby” weight. 🙂 I can’t wait to get up to Oregon and be able to run year round. I know it gets chilly in the winter but it does here in Arizona too. The first time both my kids saw snow was here in the Scottsdale area. Who would have thought. I’d much rather run in the cold and add layers than try in 100+ temps. I see people out there and more power to them but I just can’t do it.
Any who……. Back to this salad.
Cheese…. I love it. All kinds. It’s so good. I almost went paleo at one point but couldn’t do without cheese. This salad uses fresh mozzarella and basil. The fresh ingredients really make it amazing. It comes together so fast that this could be a good lunch or a fantastic side dish.
Ingredients
- 10 oz. cherry tomatoes sliced in half
- 8 oz. mozzarella bites cut into tomato half sizes
- ¼ c. fresh basil julienne
- 1 T olive oil
- 1 T balsamic vinegar
- 1 c cooked quinoa
- salt & pepper to taste
Instructions
- combine all ingredients in a bowl
- enjoy
