A delightful cranberry flavor combined with a splash of elderberry makes this champagne cocktail perfect for toasting with!

I don’t drink a lot of cocktails, but during the holidays, it’s a must for me. I start with Thanksgiving, then move to Christmas Eve and Christmas morning. Sometimes, I’ll drink eggnog with a little rum in it, and sometimes I like champagne. And, of course, there’s the occasional vodka tonic, it just depends on what strikes my fancy. One thing I do insist on, however, is champagne on New Year’s Eve, especially in cocktail form.

Mixing champagne with orange juice is great for mornings and brunch, but, when we’re talking about ringing in the New Year, I want something a little fancier, something with a little more flavor.

Cranberry is a favorite, and this year I decided to add some elderberry liqueur. Just a splash makes a world of difference. I just love sitting by the tree and ringing in the New Year with a few glasses!

I make these champagne cocktails individually since I want my bubbles to last as long as possible, and there is only a handful of us drinking them. If you want to save yourself a little time, or you’re expecting a crowd, you can pre-mix the elderberry and cranberry juice {just multiply the single serving amount by the number of glasses you expect to serve}.
