BLT ENDIVE BITES are a unique twist on BLT for an easy 10-minute appetizer that will impress your party guests!
Endive lettuce is one of my favorite ways to make any appetizer a little more elegant. Whether you are filling them with a rich cream cheese mixture, something light and healthy or tomatoes, bacon and cheese like these little BLT Endive Bites, they class up any flavor combo! Not only do they make for a beautiful display, they are also a great way to lighten up appetizers and make them low-carb! Forget the crackers and crostini, these little pieces of endive are just as crispy and perfect for healthy snacks recipes!

I have a serious appreciation for appetizers in general. There is something about a small bite that just speaks my name. This is most likely because I can try a little bit of everything and don’t feel like I am missing out!
I am the absolute worst when deciding on food when eating out. I will usually find a few dishes that sound amazing and then try and convince my friends or family to order one of each so we can all share. This way I get to try everything! Sadly, most people are not on board for this and just want to enjoy their very own meal. When that’s the case, my next best bet is a sampler. Whether it is a sampler of appetizers, wines, etc. I am all about the variety!
Appetizers inherently lend themselves to trying a variety of foods because so often there is more than one option available. When you are dreaming up your next party and the appetizer spread that you are making, I implore you to give these little BLT Endive Bites a try. I promise you won’t be disappointed!
BLT Endive Bites
- 10 leaves of endive
- 1/4 c. non-fat plain Greek yogurt
- 1/4 mayonnaise
- 1/3 c. Parmesan grated
- 1/4 c. green onion chopped
- pinch of salt
- 3/4 bacon crumbles
- 1/3 c. chopped tomatoes
In a small bowl, mix together the Greek yogurt, mayonnaise, Parmesan, green onion, 1/2 c. of the bacon and a pinch of salt.
Spread 1 heaping tablespoon of the mixture in each endive leaf and top with the remaining bacon and chopped tomatoes. Serve immediately or store refrigerated for up to 3 hours.
