Personally, I think leftovers are the best part of Thanksgiving. I always buy a turkey that is about twice the size of what I really need just so I have plenty of leftovers. We often spend Thanksgiving with family in Utah so when I get home I’ll cook a turkey just so I have leftovers!

Nothing quite beats a turkey sandwich made with leftover roasted turkey. Today’s turkey sandwich is a dressed-up, little fancier version than the traditional turkey sandwich. It’s easy to make and delicious! A Monte Cristo sandwich is traditionally made with ham and cheese but it works with turkey too. It is a variation of the French croque-monsieur.

I start with some french bread. I like to use sourdough. Spread a thin layer of mayo and mustard on the inside of the bread.

Layer your turkey and cheese of choice. I like Provolone. I then alternate turkey – cheese – turkey – cheese. Next is a layer of leftover cranberry sauce on the bread.

Then you give the bread a little bath in an egg/milk mixture. After I took the photo, I found that because my bread was so large, it was actually easier to cut the sandwich in half and then dip it. Dip both sides.

I then placed it in a medium-hot frying pan and cooked the sandwich until the cheese had melted and the bread was nice and golden brown.

You can get even fancier if you want and sprinkle it with some powdered sugar and jam after it is cooked.

Thanksgiving leftovers are the gift that keeps on giving! I could eat them for days and days after Thanksgiving. I love the idea of this sandwich and the mix of mustard and cranberry sounds perfect.
