This is the time of year for all things carrot cake… because it’s amazing! I’d eat it for every meal if I could but for now, I’ll settle for breakfast and dessert.
I don’t know about you, but I could eat a smoothie every day. They are just so refreshing and healthy! It’s easy to get your fruit for the day by drinking a berry smoothie. With a green smoothie and now this Carrot Cake Smoothie, you can also get in a cup of vegetables! Yay for reaching health goals!
This smoothie has a whole cup of carrots. If you don’t have a high-powered blender then you’ll want to cook your carrots until tender if you want it extra smooth. Honestly, this smoothie doesn’t taste very much like carrots because of all the other yummy ingredients. Like always, I added a banana because it sweetens the smoothie and makes it creamy.
My absolute favorite Caramel Pecan Carrot Cupcakes have pineapple in it so I also added some fresh pineapple to the mix. It too adds sweetness and a refreshing topical taste.
One of my favorite ingredients in smoothies is vanilla Greek yogurt. It’s creamy, sweet, AND loaded with protein. We keep a big 32-ounce container in our fridge at all times. Yeah, we make a lot of smoothies around here. It’s not just me drinking them. My two little girls love ’em and try to steal my smoothie if I haven’t finished mine before they drink up their own.
Smoothies always need a little liquid so you can suck it up through a straw. You can really toss in whatever but I prefer apple juice, again, to make it sweeter.
And of course, you can add ice to your smoothie. You know you’ve made it far in life when you finally have a fridge that has an ice maker… we’re not quite there yet so we leave it out.
To get more of that carrot cake flavor I added some cinnamon and a pinch of nutmeg, as well as some oats. Have you ever added oats to a smoothie? It gives it more bulk and helps make you feel fuller which is great if you are drinking this for breakfast. Enjoy!
Ingredients
- ¼ cup oats optional
- 1 cup carrots cooked and cool if you want extra smooth and don't have a high-powered blender
- 1 banana sliced
- ½ cup pineapple
- ½ cup apple juice or milk
- ½ cup vanilla Greek yogurt
- ¼ teaspoon cinnamon
- Pinch of nutmeg
- Ice optional
Instructions
- Place oats in a blender and grind to a fine powder. Add remaining ingredients and blend until smooth. Serve immediately.
