This CARAMELIZED ONION AND BACON SKILLET DIP is made with sweet onions, smokey bacon, and lots and lots of cheese!
If there were ever two ingredients that were meant to go together it’s caramelized onions and bacon. OK, make that three ingredients because if you add a bunch of cheese to those onions and bacon then put them in a skillet and bake them you have an amazing dip that you’re going to want to eat by the spoonful.
It doesn’t hurt that this life-changing dip is also really easy to make. You start by browning some sweet onions with a little brown sugar. The sugar helps them caramelize and, when they are almost done cooking, you can add a couple of tablespoons of white wine or beer and use the liquid to deglaze the pan. What you end up with are soft, sweet onions that are just begging to be mixed with some smokey bacon. Don’t leave them hanging! Add the onions to a bowl with cooked, diced bacon, Gruyere cheese, mayonnaise, and sour cream and stir everything together until it is thoroughly mixed.
Now, you can bake this in anything you want. Personally, I like to use a small 8-inch cast-iron skillet. Everything cooks together so nicely in the cast iron skillet and I think it makes a great presentation at a party. If you don’t have one don’t fret, you can just pour your mixture into a 2-quart casserole dish and you’ll still end up with the same awesome dip in the end. Place your dish or skillet in a 400F oven and bake for 20 minutes or until the cheese is completely melted and starts bubbling. When it’s ready you can dig right in. I suggest slicing up a soft baguette and using that to scoop up all of that cheesy, bacon-y, caramelized goodness but chips, crackers, and even a spoon works just as well!
Ingredients
- 6 Bacon strips cooked bacon diced
- 1 Tbsp Butter
- 2 Sweet onions diced
- ¼ tsp Brown sugar
- ¼ tsp Salt
- ¼ tsp Black Pepper
- 2 Tbsp Beer or White Wine
- 1 c Gruyere Cheese shredded
- ½ c Sour cream
- ½ c Mayonnaise
- 1 French Baguette
Instructions
- Preheat oven to 400-degrees F.
- In a large skillet, melt butter over medium-high heat. Add onions, salt, and pepper. Cook, stirring occasionally about 8-10 minutes or until onions soften.
- Add brown sugar and continue to cook for 15-20 min or until onions are golden brown.
- Pour in beer or wine to deglaze, scraping sides and bottom of the pan. Continue cooking for another 2 minutes.
- Transfer cooked onions to a mixing bowl. Add remaining ingredients and stir until thoroughly combined.
- Spread mixture into a small 8-inch skillet or a 2-cup baking dish and bake for about 20 minutes, until bubbly and golden brown.
- Serve with a sliced up french baguette.

This sounds great, but how much butter do you cook onions in. Also, it then says to add thyme (which isn’t listed in the ingredients) so do you add the brown sugar when you add the thyme (how much thyme?) Thanks, Cate
