Who says popsicles are just for kids? Not me! That’s what I tell myself when I am eating these Caramel Coffee Popsicles!
Do you go to Starbucks? I was obsessed. Seriously obsessed earlier in the year. Then Lent rolled around and I gave it up. It was hard but it saved me some money, that’s for sure.
I missed out on the whole birthday cake drink. Did you try it? How was it?
Well when I decided to make these coffee pops I had no idea it would turn out to taste like my favorite frappuccino from Starbucks, Caramel Macchiato. I really didn’t drink anything else from there for years and years. It always tasted good so why mess up a good thing?
I am glad I decided to play around with coffee in a popsicle because now I can have my favorite drink at home anytime I want!
So you see, I am a big fan of popsicles. Maybe that is the kid in me, I don’t know. But I love to make them and eat them. I’ve done all kinds of flavors even these Banana Pudding Yogurt Pops for you lovely folks.
Making popsicles couldn’t be any easier. Investing in some molds is a smart move. You can play around with lots of flavors and find out what works best for you.
These were so simple. I just made my espresso. Heated my milk and caramel. Add them together and then frozen them! If coffee bothers you before bed, I would suggest using decaf! Though I eat them and it helps power me through my late evenings while I work! ENJOY!
Ingredients
- ¾ cup espresso or strong coffee
- 1 tablespoon granulated sugar
- 1 ½ cup milk
- 3 tablespoons caramel
- popsicle molds
Instructions
- Make your coffee. While still hot add sugar and stir till dissolved. Set aside.
- Add milk and caramel into a small sauce pan. Cook on medium heat until caramel has dissolved.
- Add coffee to milk and stir. Set aside to completely cool.
- Pour into popsicle molds and freeze for 4 hours or overnight!
Notes
*If using wooden sticks. Freeze for 1-1/2 hours then add sticks and continue to freeze for 3 hours.
