This fluffy Apricot Ginger Quinoa makes an amazing and healthy side dish. Adding apricots and ginger really kicks this side dish up a notch!
Quinoa is such an amazing food…it’s almost perfect in terms of nutrition plus it’s easy to prepare and can be super tasty too. Adding fresh and bold flavors can really jazz up a bowl of quinoa. I love to serve quinoa in place of rice or couscous with supper for a healthier side dish. The bold flavors in this Apricot Ginger Quinoa go best with a hearty main dish like a grilled steak.

- 1 cup quinoa
- 1/2 cup dried apricots roughly chopped
- 1/2 tsp fresh grated ginger
- salt to taste
- In a medium saucepan, with a lid, bring 2 cups of water to a boil over high heat. Add quinoa, cover and let simmer over medium heat for 12 minutes. Remove from heat, add chopped apricots and ginger, and fluff lightly with a fork. Return lid and let stand 15 minutes.
- Season to taste and serve warm.
