Family dinner is very important to me. It doesn’t matter how busy we are, or how many activities we have scheduled, we eat together as a family 6 nights a week.

On Saturdays I feed the kids, and then Ian and I eat later. Just the two of us. NO kids allowed. It is something that we have been doing for 16 years ever since Charlie was born.

I love hearing about the kids days during meals, that is if I can get them to speak one at a time, but one day a week it is SO nice to have an uninterrupted adult conversation. Every once in a while we’ll go out to eat, but most of the time we make dinner at home, and except for the dishes, I actually prefer staying home. I don’t have to get all dressed up (I may have even eaten a meal or two in my jammies), there’s no driving, and we can make anything we want. It’s the one day a week we get to eat all those meals that the kids won’t touch.

Last weekend I tried a recipe from one of our favorite restaurants. Individual sized beef en croute. It’s like beef wellington made just for two. Perfect for a special Valentine’s Day dinner or simply a Saturday night dinner without the kids.

Ingredients
  

  • 1 sheet of puff pastry thawed
  • 2 - 6 ounce filet mignon seasoned with salt and pepper
  • 1 Tbsp butter
  • ¼ of an onion thinly sliced
  • 4 ounces mushrooms sliced
  • ½ tsp salt
  • pepper
  • 1 egg lightly beaten

Instructions
 

  • melt butter in a skillet over medium heat
  • once melted, add onion and mushrooms
  • season with salt and pepper, reduce heat to low, and cook until the mushrooms and onion are soft, and the liquid from the mushrooms has evaporated
  • remove from skillet, and set aside
  • turn up the heat to medium - high
  • place seasoned filet in the skillet and sear 2 minutes per side
  • cut puff pastry into 2 pieces
  • divide the mushrooms, and place in the center of each square of pastry
  • place filet on top of mushrooms, and fold pastry to fully enclose steak
  • brush with egg wash to seal seams
  • place steaks seam side down on a baking sheet, brush the tops with the egg
  • chill steaks for 30 minutes
  • heat oven to 425 degrees
  • place baking sheet in the oven, and immediately reduce the temperature to 400 degrees
  • bake 20 minutes - for med-rare, bake another 5 minutes if you prefer them more well done
  • allow to rest 5 minutes before serving

    I made this recipe last night. The instructions were crystal clear and I got a perfect result. I served it with homemade oven fries and steamed broccoli. It was deeee-licious and I will definitely be making it again. Thank you Heather 🙂

    PS. I live in New Zealand and we use the metric system…
    2-6 ounces beef = 55-170gm
    4 ounces mushrooms = 115gm
    425 degrees F = 220 degrees C
    400 degrees F = 200 degrees C
