Tomato and Asparagus Salad is not only refreshing and delicious, but it is also a healthy dish that’s perfect for the summertime!
Quick-fix meals with tons of flavor are exactly what summer is all about! This healthy dish only takes 15 minutes to prepare and is bursting with a lemony flavor that is perfect for family picnics. Aren’t the bright red and green colors so pretty?
I used lemon pepper seasoning as my flavor for this dish but you could also substitute your favorite seasoning such as seasoned salt if you would rather. Top the tomatoes and asparagus with parmesan cheese for an extra cheesy goodness touch!
Ingredients
- ⅓ cup diced asparagus
- ⅓ cup diced cherry tomatoes
- 2 tsp. olive oil
- ¼ tsp. lemon pepper seasoning
- 1 Tbsp. grated parmesan cheese
Instructions
- Place oil in a small saucepan and add asparagus. Cook until asparagus are slightly tender. Add tomatoes and continue to cook until tomatoes have softened slightly. Add lemon pepper seasoning and grated parmesan cheese. Serve immediately
