Homemade Garden Salsa
When your garden starts to explode with tomatoes because of unusual hot weather in September the only thing I could figure to use them for was Homemade Garden Salsa!
In our household, we are a little weird when it comes to salsa. We actually do not like it spicy, unless you are my teenage son. Also, I am about to admit something crazy! We don’t like cilantro either! I know, I know, we are weird! I mean, I don’t mind it when I go to a restaurant, and it is added a little into my salsa there, but I really just do not care for it at home. That might be why we love this creamy cucumber salsa (sans cilantro) so much!
My husband either. So, in this, we are replacing the cilantro with parsley, because they are similar and because my garden has parsley all over the place!
This salsa actually came out almost sweet because of the garden fresh tomatoes I used in it but I also added a little garlic powder and dried oregano to enhance the flavor. Oh and I cooked the salsa.
I know another thing you are saying, Do what? Yes I cooked it. I wanted my salsa to be chunky but not crunchy so to make it both ways I cooked it low and slow and we are completely satisfied how this non traditional salsa came to be! ENJOY!
Homemade Garden Salsa
Ingredients
- 1 cup onion chopped
- 1 ½ cups tomatoes diced
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 tablespoon fresh parsley diced
- ¼ cup tomato sauce
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
Instructions
- In a medium sauce pan add onion, tomato and olive oil.
- Simmer on medium heat for 10 minutes.
- Add remaining ingredients and continue to cook for 15 minutes.
- Cool completely and serve! ENJOY!
