Tabouli
Tabouli is a filling salad that can be enjoyed on it's own or in a pita or flat bread with Kibbeh, lamb or steak! It's so simple to make and very fresh.

Ingredients
½
cup
cracked wheat
fine (soaked in warm water for at least 30 min)
½
lettuce
we used romaine and chopped very small
3
tomatoes
diced
5
green onions
dice the entire onion minus the roots
2
large cucumbers
peeled and diced
2
bunches of curly parsley
very small chop
¼
cup
fresh mint leaves
very small chop
juice of 2 lemons

olive oil

garlic powder
salt and pepper to taste
Instructions
soak cracked wheat for 30 min in warm water
in a large salad bowl combine all the veggies and herbs
in a small bowl or jar combine the oil, lemon juice, garlic, salt and pepper.
squeeze out the water from the wheat and add to the salad bowl
pour the oil mixture over the salad and toss
