Drain and rinse the garbanzo beans. Transfer them to a medium saucepan and fill with water until the beans are covered (around 1 ½ cups).
Place the saucepan over high heat and bring to a rapid boil. Cook until half of the water has boiled off, about 10-15 minutes.
Pour the beans and remaining water into the food processor. Cover and process for 2 minutes.
Chop the garlic. Then, sprinkle the salt over the garlic. Use the side of the knife blade to grind the salt into the garlic and make a paste.
Add the garlic paste to the food processor along with the tahini. Cover and process again for 2 minutes.
With the food processor running, slowly pour in the lemon juice. Then, drizzle the olive oil in VERY slowly. The stream should be about the thickness of a string.*If the hummus still seems too thick, slowly pour 1-2 tablespoons of warm water until your desired thickness is reached.
Transfer the hummus to a serving bowl. Drizzle with a bit of olive oil on top, and then sprinkle with paprika and pine nuts for garnish. Serve with bread, crackers, or veggies for dipping.
