Trim the broccoli and cut it into florets. Add the broccoli to a food processor and pulse until it's in small pieces.
Add the broccoli slaw, bacon and onion to a large salad bowl and mix to combine.
In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, and pineapple juice. Season with salt and pepper, check the taste and adjust as needed.
Pour the dressing over the broccoli slaw and toss until evenly coated. Serve immediately.
