Pat the chicken dry using paper towels and set aside.
In a large mixing bowl, mix together the oil, Italian seasoning, paprika, salt, and cayenne pepper.
Add the chicken to the seasoned oil and toss to coat. Place the chicken breasts into the air fryer basket. (It's okay to place the chicken a bit tight in your air fryer, it will shrink when cooked.)
Cook at 360 degrees F for 15-20 minutes until the chicken is cooked through. (see note)
Remove chicken from the air fryer and let rest for 5 minutes before serving.
Notes
Cooking time varies slightly based on the thickness of the chicken breasts. To avoid overcooked and dry meat use a thermometer placed into the thickest part of the meat and cook until a temperature of 165 degrees F has been reached.
To help the chicken cook more evenly you can pound the thicker end until the thickness is the same across each breast.
