Quick Pesto and Shrimp Pasta

Pesto and Shrimp Pasta is delicious and fast! Cherry tomatoes are warmed and tossed with fresh mozzarella and the pasta to take this quick dish to the next level!

Ingredients

  • 1 lb. cavatappi
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 lb shrimp peeled and deveined with the tails removed
  • 7 oz. of pesto sauce
  • 8 oz. fresh mozzarella cut into 1/4 inch cubes
  • 1 pint cherry tomatoes cut in half

Instructions

  • preheat oven to 400 degrees
  • in a medium bowl toss the shrimp, olive oil, salt, pepper, and garlic powder
  • lay out onto a baking sheet and cook in the oven for 8-10 minutes
  • cook pasta according to directions on the package
  • place tomato halves in a skillet over medium heat and stir until just heated through
  • in a large bowl toss pasta, tomatoes, pesto, shrimp and cheese
  • serve and enjoy!
