Slow Cooker Cheddar Jalapeno Corn Casserole

SLOW COOKER CHEDDAR JALAPENO CORN CASSEROLE can't be beat! It delivers the sweetness of corn with the kick of a jalapeno and the richness of cheddar cheese, all that in a slow cooker!!!!

Ingredients

  • 8 oz cream cheese softened
  • 2 eggs beaten
  • 1/2 cup sugar
  • 1 1/2 cup Homemade Cornbread Mix
  • 3 cups frozen corn
  • 14.75 oz can creamed corn
  • 1 jalapeno pepper de-seeded and chopped
  • 2 cups cheddar cheese shredded
  • 1 cup milk
  • 2 tbsp butter melted
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp pepper

Instructions

  • spray the insert of your slow cooker with a lot of cooking spray or use a liner
  • in a mixing bowl, combine cream cheese, eggs and sugar
  • add in remaining ingredients and stir until combined
  • pour into slow cooker and cover
  • cook on high for 2-4 hours.
  • enjoy!
