Tomato Jam
Tomato Jam is a simple appetizer recipe that can be used for any occasion! Serve it up while watching the game, cocktails with friends or the holidays! It will be the hit of the party!

Ingredients

tbsp
butter

sweet onion
diced
½
cup
water
divided

can Hunt's Whole Peeled Tomatoes
2-28 oz cans, drained and seeds removed, cut into 1/2 inch pieces
1
jalapeno
diced (remove seeds to reduce the heat)
1
cup
granulated sugar
1
tsp
salt

black pepper
Instructions
heat a large saucepan over medium low heat
melt butter in saucepan and add onions
stir onions occasionally for roughly 3 to 5 minutes
add in 1/4 cup of water and allow to cook another 3 to 5 minutes, until water is gone and onions thicken
add in remaining water and repeat the process cooking another 3 to 5 minutes
stir in the tomatoes, jalapeno, sugar, salt and pepper
stir often until liquid is cooked off and tomatoes have thickened into a jam texture
remove from heat and store in a jar with an airtight lid
To serve over baked brie
preheat oven to 350 degrees F
place parchment paper on a baking sheet
lay brie round in the center of the baking sheet and place into oven
allow to bake for 5-7 minutes
remove from oven and using a spatula, place on the center of a serving plate
spoon the tomato jam on top of the brie and surround it with toast or crackers
enjoy!
