Ingredients

lb.
boneless skinless chicken breasts
cut into 1/2 inch pieces
Salt and pepper

Tbsp.
coconut oil
3
garlic cloves
minced
1
medium sweet potato
peeled and diced

cup
chicken broth or water
½
lb
fresh asparagus
cut into 1.5-inch pieces

salt

black pepper

red chili flakes
Instructions
Season the chicken with salt and pepper.
In a skillet over medium heat, add the coconut oil.
Once heated, add the garlic and chicken. Sauté for about 7-8 minutes or until it is cooked through. Be sure not to overcook! Set the chicken aside.
In the same skillet, add the sweet potato and chicken broth.
Cook for about 7-10 minutes or until the sweet potato is cooked through.
Add the asparagus and cook for about 4-5 minutes.
Add the chicken and season with salt, pepper, and red chili flakes.
Serve hot.
