The Great Food Blogger Cookie Swap 2012 and Our {Pistachio & Cranberry Oatmeal Cookies}

These oatmeal cookies have chopped pistachios and cranberries to make taste amazing and perfect for the holidays!

Ingredients

  • 2 sticks of butter
  • 1 1/4 c. packed brown sugar
  • 3/4 c. sugar
  • 2 t. vanilla extract
  • 2 large eggs
  • 1 1/2 c. flour
  • 1/2 t. baking powder
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1-2 c. pistachios chopped
  • 1-2 c. craisins
  • 3 c. old fashioned oats
  • 1 bag of white chocolate melted

Instructions

  • preheat oven to 350 degrees
  • beat the butter, sugars and vanilla until creamy
  • add eggs one at a time
  • in small bowl combine flour, baking powder, salt and cinnamon
  • slowly add into wet ingredients
  • stir in oats, pistachios and craisins
  • form into 2 tablespoon balls and place 2 inches apart on a baking sheet
  • bake for 12-14 min
  • cool on a rack
  • once cool spread melted white chocolate on the bottom and set down upside down to cool.
