Garlic Roasted Shrimp

  • 1 lb. of shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder

Spinach Artichoke Pasta

  • 12 oz. of Farfalle pasta
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 8.5 oz. can of artichokes hearts chopped
  • 8 cups baby spinach
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded Parmesan cheese


Roasted Garlic Shrimp

  • preheat oven to 400 degrees
  • line a baking sheet with foil
  • toss shrimp, olive oil, salt, pepper and garlic powder together
  • spread shrimp out in an even layer and place in the oven
  • roast for 8-10 min or until shrimp are cooked through
  • remove to a plate to wait for pasta

Spinach Artichoke Pasta

  • cook pasta according to directions on package
  • in a large skillet heat olive oil over med heat
  • add onions and cook for 2-3 minutes or until translucent
  • stir in garlic and cook for 1-2 min
  • add in artichokes and spinach (this may seem like a lot but it cooks WAY down)
  • season with salt and pepper
  • once the spinach has cooked down, stir in the Parmesan cheese
  • add pasta to a large serving bowl
  • add spinach mixture to the pasta and toss
  • place the shrimp on top and serve
