Ingredients
1large pineapplediced
5Roma tomatoesseeded and diced
½cupcilantrofinely chopped
½cupred onion finely chopped
1 clovegarlicminced
2jalapeño peppersseeded and finely chopped
1tablespoonsfresh lime juice
Salt and freshly ground black pepper
Instructions
In a large mixing bowl, combine chopped pineapple, tomatoes, cilantro, red onion, garlic, and jalapeños. Drizzle with lime juice and toss to coat evenly.
Season with salt and pepper to taste. Allow flavors to blend at room temperature for 30 minutes, or chill until ready to serve. Goes well with tortilla chips or over grilled chicken or fish.
